Pork Shabu and Green Bean Ume Mayo Mix

This dish combines tender boiled pork (shabu-shabu style) with crisp green beans, all coated in a refreshing blend of umeboshi (pickled plum), mayonnaise, sesame, and bonito flakes. It’s healthy, full of umami, and comes together quickly—perfect as a side dish, a light snack, or a sake pairing. The ume mayo dressing adds a tangy and creamy flavor that balances the richness of pork beautifully.

What you'll need

  • 100 g pork (thinly sliced, for shabu-shabu)
  • 100 g green beans
  • 2 tbsp cooking sake
  • 2 umeboshi (pickled plums)
  • 2 tbsp mayonnaise
  • 1 tbsp white sesame seeds
  • 1 tbsp ground sesame seeds
  • 2–3 drops soy sauce
  • 5 g dried bonito flakes
  • Pinch of salt (for boiling beans)

How to make it

Boil Green Beans – Remove stems from the green beans. Boil in salted water for about 2 minutes, drain, cool slightly, and cut into 5 cm pieces.

Prepare Pork – Cut pork into bite-sized pieces. Add cooking sake to boiling water, then add pork. Boil for 10 seconds, turn off heat, and let residual heat finish cooking. Transfer to ice water, then drain.

Mix Ingredients – In a bowl, combine green beans and pork. Add mashed umeboshi, mayonnaise, sesame seeds (white & ground), soy sauce, and bonito flakes. Mix well until evenly coated.

Chill & Serve – Refrigerate until chilled, then serve as a refreshing side or sake snack.
