Yamagata Masamune Junmai Ginjo Akaiwaomachi est brassé par Mitobe Sake Brewery à Tendo, au Yamagata, à partir de la précieuse variété de riz Akaiwao machi. Depuis 1898, Mitobe cultive la moitié de son propre riz à sake et s'approvisionne en eau riche en minéraux de la chaîne de montagnes Ou, produisant des sakes à la finale nette et précise qui a valu à la marque sa réputation de sabre Masamune.
