Junmai daiginjo commercialisé en automne comme hiyaoroshi par la brasserie Yamanarishuzou d'Okayama, une maison qui produit du sake dans la région Bitchu depuis plus de deux cents ans grâce au riz et à l'eau locaux. Le sake est pasteurisé une seule fois après le pressage, puis stocké tout l'été avant d'être expédié sans traitement thermique supplémentaire.
