Un sake daiginjo non pasteurisé élaboré avec du riz Sake Komachi de la préfecture d'Akita, poli à 40 %. Le Sake Komachi possède des caractéristiques brassicoles comparables au Yamada Nishiki, et, pressé par suspension libre, il offre une saveur fine, un umami élégant qui s'épanouit gracieusement en bouche, ainsi qu'une finale tranchante. Commercialisé en ginjo namazake.
