Yatagarasu Bodaimoto Junmai Kozennoki se elabora usando el antiguo método bodaimoto que se originó en el templo Shoryakuji de Nara, una de las tradiciones de fermentación más antiguas e históricamente significativas de Japón. Esta técnica utiliza bacterias lácticas de origen natural para crear un pie de cuba con un carácter rico y complejo, produciendo un sake con profundidad terrosa y acidez suave. El resultado es un junmai de cuerpo pleno con capas de umami y un final robusto y agradable.
