El Yamada Nishiki pulido a un nivel de élite del 35 % sustenta este daiginjo de Yamashiroya Shuzo en Yamaguchi, elaborado con arroz cultivado sin fertilizantes químicos por agricultores bajo contrato en el distrito de Aito-Tokusa, en Yamaguchi. El agua del manantial subterráneo bajo el santuario Yamaguchi Daijingu, una de las tres aguas notables de la región, proporciona una base mineral limpia y delicada. El extremo nivel de pulido busca la máxima expresión de refinamiento aromático y ligereza.
