El Miyama Nishiki al 70 % de pulido es la base de este junmai, elaborado con una rara levadura Kyokai de preguerra mediante el método kimoto en una bodega de Nagano que elabora sake únicamente en invierno. El mayor porcentaje de pulido conservado preserva más carácter del grano junto con la acidez firme que genera la fermentación kimoto.
