Arroz cultivado en Miyagi, pulido al 60 %, se embotella sin pasteurizar y sin diluir como shiboritate namagenshu, preservando la frescura y el cuerpo concentrado del sake recién prensado. El agua de pozo ultrablanda de la destilería, entre las fuentes con menor contenido en hierro de Miyagi, contribuye al carácter suave y dulce por el que Moriizumi es conocido.
