El arroz progenitor del Yamada Nishiki, el misterioso Ho Yamada. Ampliamente conocido como variedad progenitora del Yamada Nishiki, su origen no está claro: coexisten tres tradiciones distintas, representadas en el logo en el centro de la etiqueta. Es un arroz de sake muy valioso con un volumen de producción extremadamente pequeño. El Ho Yamada tiene una acidez bella y poderosa, con un sabor ligeramente diferente al del Yamada Nishiki, claro y bello. Tras la acidez, se percibe dulzura y umami. Acidez bella y poderosa, luego la dulzura del arroz.
