La serie MK destaca el koji blanco y una acidez dulce. MK-Z es la abreviatura de MansakuKoBoProjectZ, un sake que desafía un perfil de sabor completamente diferente. Contiene koji blanco, un koji para el shochu, para crear una acidez única. La proporción de ácido cítrico es muy alta gracias a la combinación de levaduras ácidas y koji blanco. Es un sake de sabor complejo que utiliza 'Hinomaru', la materia prima propia de la bodega, como arroz, con una mezcla de ácido cítrico y umami. Una expresión densa donde el koji blanco, el ácido cítrico y una acidez compleja se manifiestan claramente.
