El arroz cultivado en Chiba, pulido al 60 %, se prensa sin filtración y se embotella sin diluir como namagenshu, conservando el cuerpo fresco y concentrado de este junmai ginjo de la costa de Kujukuri. La fermentación se lleva a cabo con música en el moromi, un enfoque distintivo de esta pequeña cervecería de Chiba fundada en 1893, lo que produce un sake de sabor pleno con una textura viva y crujiente.
