Elaborado en Yahiko Shuzo en el pueblo de Yahiko, Niigata, este ginjo se beneficia de las aguas subterráneas del monte Yahiko para su textura suave y redonda en boca. La brasserie utiliza únicamente arroz sake cultivado localmente, pulido internamente, con un cultivo de koji cuidadoso en bandejas tradicionales koji-buta y pasteurización en botella bajo conservación en frío.
