Junmai ginjo pulido al 55 %, producido en una destilería de Sabae, Fukui, fundada en 1753, que utiliza el suave agua de manantial del río Hino y arroz Gohyakumangoku cultivado localmente. El toji se formó bajo maestros cerveceros de Noto, Niigata y Tamba, aportando una perspectiva multiregional a una filosofía de ingredientes centrada en Fukui.
