Nombrado en honor al lugar de nacimiento del señor de la guerra Hojo Soun en Okayama, este ginjo utiliza arroz Akebono pulido al 50 % y se somete a una fermentación larga a baja temperatura. El resultado es un sake de carácter refrescante y finalización limpia y seca, con un contenido alcohólico del 15,3 % y un valor SMV de +3,5.
