El Gohyakumangoku de Niigata se pule al 50 % y se fermenta lentamente en el estilo tradicional de la prensa fune de la Joetsu Shuzo, una cervecería con más de 200 años de historia en Joetsu, Niigata. La combinación de Yamada Nishiki para el moto (arrancador) y Gohyakumangoku de Niigata para el mosto principal produce un junmai ginjo con aroma floral ginjo y un paladar ricamente suave que termina limpiamente.
