Prensado con la tradicional prensa de madera fune durante dos días y dos noches, este ginjo nama de la Joetsu Shuzo en Niigata está pulido al 55 % y fermentado lentamente para desarrollar un aroma fresco y limpio con una suave y delicada dulzura. La cervecería produce sake en Joetsu desde 1804, utilizando agua de manantial de pozo profundo para todo el brassage.
