Azumacho Daiginjo utiliza Yamada Nishiki pulido al 35%, procedente de Seto Shuzo en Saga. Pulido a casi la mitad de su tamaño original, el Yamada Nishiki produce un daiginjo extraordinariamente refinado, con el carácter aromático y preciso típico de la tradición de sake premium de Kyushu.
