Asamai Shuzo aplica el método tradicional kimoto a este Junmai, usando Miyama Nishiki pulido al 60 % y bacterias lácticas cultivadas naturalmente para desarrollar un iniciador de fermentación de mayor complejidad. Como destilería exclusivamente Junmai desde 2011, Amanoto utiliza solo arroz Akita de origen local cultivado en un radio de 5 kilómetros del lugar de elaboración en Hiraka Town.
