Miyama Nishiki mit 70 % Poliergrad bildet die Basis dieses Junmai, gebraut mit einer seltenen Vorkriegs-Kyokai-Hefe nach der Kimoto-Methode in einem Nagano-Weingut, das Sake nur im Winter braut. Der höhere Mahlrückstand bewahrt mehr Korncharakter neben der festen Säure, die die Kimoto-Gärung erzeugt.
