Ooyatakashi Shuzo, founded in 1830 (Bunsei 13) in Aiko-gun, Aikawa Town, Kanagawa Prefecture, uses soft subterranean water from the Tanzawa mountain system as the foundation of its sake. Shoryuhorai is one of the brewery's two main labels and is brewed using the traditional kimoto method, producing a structured, layered sake that the brewery recommends warming to bring out its full depth. The name references the dragon of the founder's birth year and the auspiciousness of that year entering the world of sake brewing.
