Kisohinoki

Kisohinoki is produced by Nishio Shuzo, one of the oldest breweries in the Kiso Valley of Nagano Prefecture, with origins in the early Edo period when the brewery operated alongside the historic Nakasendo Highway at Suhara-juku. Located at an elevation of 933 meters, surrounded by mountains and cooled to below freezing in winter, the brewery uses the renowned Kiso Bireisui water and high-quality sake rice to produce sake shaped by one of Japan's most dramatic alpine brewing environments. The Kisohinoki brand takes its name from Kiso's famous Japanese cypress forests, a defining feature of the region's natural identity.
