Yamaji Shuzo, founded in 1532 in Kinomoto, Nagahama City, Shiga Prefecture, has been brewing along the historic Hokkokukaido highway for nearly five centuries under fifteen generations of the same family, placing it among Japan's oldest continuously operating sake producers. The brewery grows its rice with organic fertilizers and minimal agricultural chemicals, using a locally certified environmentally friendly variety called Tamasakae. Hokkokukaido, their flagship brand, is a Daiginjo known for its clean, dry finish shaped by the region's cold climate and long fermentation.
