Bouchotsuru
Bouchotsuru is produced by Yamagata Honten, a brewery tracing its founding to 1805 in Hiroshima, where the brand name was inspired by the appearance of Miyajima's Mount Misen — likened to the legendary Mount Hourai of immortality. The brewery relocated its fermentation operation to a basement in 1995, becoming the first brewery in Japan to conduct fermentation underground, and uses locally grown Hiroshima sake rice varieties including Hattannishiki and Koiomachi. Bouchotsuru is distinguished by its commitment to Hiroshima ingredients and a fruity, approachable character shaped by the prefecture's medium-hard well water.
