Just a three-minute walk from Shimbashi Station, Uobaru Fubuki Sushi is a fully reservation-only sushi restaurant with just nine seats, creating an intimate and relaxed setting. The restaurant focuses on authentic Edomae sushi while keeping the atmosphere approachable rather than overly formal. Fresh seafood is sourced directly from fishermen in Toyosu and Miyazaki, while premium horse meat is delivered from Kumamoto. The compact counter-centered space also lets guests watch the chef’s precise work up close.

The Course
The ¥9,900 special sushi course includes 22 dishes and changes according to the season and daily market availability. A sample course features two appetizers, five pieces of sashimi, three to four pieces of nigiri, two additional dishes, another three to four pieces of nigiri, simmered anago, an ikura mini bowl, a uni mini bowl, tuna, tamagoyaki, and a steamed dish. One of the most memorable highlights is the restaurant’s signature ikura mini bowl, generously topped with salmon roe. With a mix of nigiri, sashimi, small plates, and mini rice bowls, the course offers plenty of variety from start to finish.
