What you'll need
- <Pork Miso Topping>
- 100g ground pork
- Salt and pepper, to taste
- 1 clove garlic, grated
- 1 clove ginger, grated
- 1 tsp doubanjiang (chili bean paste)
- 1 tsp miso
- 1 tsp Worcestershire sauce
- 1 tsp cooking sake
- 4 tbsp ground sesame seeds
- <Tofu Base>
- 200g firm tofu, drained
- 150ml soy milk (unsweetened preferred)
- 1½ tbsp mentsuyu
- 1/2 tsp chicken stock powder
- 1 tbsp potato starch or cornstarch
- <Toppings>
- Chopped green onion, to taste
- Chili oil, to taste
How to make it
Heat a frying pan and cook the ground pork. Season with salt and pepper, then add the grated garlic, grated ginger, and doubanjiang. Stir-fry until fragrant.
Add the miso, Worcestershire sauce, and cooking sake. Mix well, then stir in the ground sesame seeds. Cook until most of the moisture evaporates. Set aside.
Cut the drained tofu into bite-sized pieces.
In a saucepan, combine the soy milk, mentsuyu, chicken stock powder, and potato starch. Mix thoroughly before turning on the heat.
Add the tofu and cook over medium heat, stirring gently until the sauce thickens.
Transfer to a serving bowl and top with the sesame pork miso. Garnish with green onions and chili oil as desired.
Tips
- Unsweetened soy milk is recommended, but regular soy milk or milk also works well.
- Thoroughly draining the tofu helps prevent a watery flavor.
- Add extra chili oil if you prefer more heat.
