What you'll need

  • 1 medium tomato, diced
  • 1/4 onion, finely diced (red onion recommended)
  • 1 stalk celery, finely diced
  • Celery leaves, finely chopped
  • 1 clove garlic, grated
  • 1 tbsp lemon juice or lime juice
  • Magic Salt or salt, to taste
  • Freshly ground black pepper, to taste
  • Tabasco sauce, to taste (optional)

How to make it

Dice the tomato. Finely dice the celery stalk and onion, then finely chop the celery leaves.

Add all the prepared vegetables to a bowl along with the grated garlic, lemon or lime juice, Magic Salt (or regular salt), black pepper, and Tabasco if using. Mix well, adjust the seasoning to taste, then refrigerate for about 30 minutes before serving to allow the flavors to meld.

  • Fresh cilantro, parsley, or finely diced bell pepper make delicious additions for extra flavor and texture.
