Creamy Beef Stroganoff

Beef stroganoff is the kind of comforting dish that feels special while still being surprisingly easy to prepare at home. In this version, thinly sliced beef is cooked with sweet onions and mushrooms, then finished in a creamy sauce made with milk.

There is no need for heavy cream. Flour thickens the milk beautifully, while white wine, Japanese chuno sauce, and consommé add depth and savory richness. Serve it with rice for a satisfying meal, spoon it over bread, or pair it with a soft omelet.

What you'll need

  • 300 g beef belly or thinly sliced fatty beef
  • 7 button mushrooms
  • 1 onion
  • 20 g butter
  • 600 ml milk
  • 50 ml white wine
  • 3 tbsp all purpose flour
  • 1½ tbsp Japanese chuno sauce
  • 1½ tbsp granulated consommé
  • 1 tsp sugar
  • Salt and black pepper to taste

Thinly slice the onion and mushrooms.

Melt the butter in a frying pan and cook the onion until soft and lightly golden. Add the beef, season with salt and pepper, and cook until the meat changes color. Pour in the white wine and allow the alcohol to cook off briefly.

Tips

  • Add the milk gradually while stirring. This prevents lumps and creates a smoother sauce.
