Le Kashimagin Ginjo de la Kawano Shuzo à Yamaguchi est un sake de grade ginjo issu d'une préfecture riche en tradition brassicole et en sources d'eau souterraine douce. Yamaguchi, à la pointe occidentale de Honshu, reflète dans sa culture du sake l'influence à la fois du raffinage brassicole de l'ouest du Japon et de la géographie maritime côtière, donnant naissance à un ginjo délicat et aromatique.
