Hiroshima Hattan Ginjo de Hakubotan Shuzo est brasse a Saijo, Higashi Hiroshima, dans la plus ancienne brasserie de ce celebre quartier sake, fondee en 1675. L'utilisation du riz Hattannishiki, la variete emblematique de Hiroshima reputee pour ses qualites favorables au Ginjo et son potentiel aromatique, exprime une tradition d'ancrage dans le terroir local, portee par l'environnement de brassage aux eaux douces de Saijo. Hakubotan est associee a la revolution du brassage aux eaux douces au Japon a la fin du XIXe siecle, qui a contribue a fagonner le style Ginjo elegant et aromatique aujourd'hui reconnu dans le monde entier.
