De la brasserie
Cela fait plus de cent ans que nous élaborons du sake à Tamba Sasayama. Dans ce pays entouré à l'est par Kyoto, à l'ouest par Harima, au sud par Settsu et au nord par Tango, nous avons toujours été aimés des habitants locaux. La brasserie Hikari Ichi Sake Brewery propose des sake faits à la main tout au long du printemps, de l'été, de l'automne et de l'hiver. Dès la première génération, alors qu'il traversait le Kyushu en tant que Tamba Mori, il a construit sa propre brasserie à l'emplacement actuel à la recherche d'une eau particulière. Notre sake, Hidetsu, qui a toujours relevé des défis et marché aux côtés des habitants, est un sake fait de «parfums» et de «saveurs» oubliés, profondément ancré dans la vie quotidienne. Nous continuerons à produire un sake proche des moments importants du quotidien, précieux pause dans les journées chargées.

1916
Founded; named "Kikkoto Brewing" after founder Kariba Tozo, later renamed "Kariba Sake Brewery."
1957
Renamed the sake brand to "Shugetsu."
1988
Launched fresh-pressed Junmai Nama and fresh-pressed Namagenshu.
1991
Opened the direct-sales shop "Shugetsu-an"; expanded cold-storage facilities and launched cold-stored (Hiyakakoi) Junmai Nama and Namagenshu.
1994
Held the first New Sake Festival; launched "Asaichiban Shibori" (first morning press).
1996
Began growing Yamada Nishiki sake rice on the brewery's own paddies.
1998
Launched the "Tsuki no Himuro" (Moon's Ice Chamber) Junmai Nama and Namazake.
2018
Incorporated and changed the company name to "Kariba-ichi Shuzo Co., Ltd."
