El Yamada Nishiki pulido al 40 % se envejece durante aproximadamente tres años a baja temperatura para este daiginjo koshu de Kirashuzo en Bungo-Ono, Oita. Elaborado completamente a mano en cada etapa de producción, el envejecimiento prolongado agrega una capa adicional de profundidad y suavidad a una base de daiginjo ya refinada.
