Soshun Nakadori Junmai es un sake de arroz puro de la Hayakawa Shuzo en Komono Town, prefectura de Mie, una pequeña destilería familiar que usa agua subterránea suave de las estribaciones del monte Shakadake en la cordillera de Suzuka. La porción nakadori, extraída del centro del prensado donde el equilibrio de aroma y sabor alcanza su punto óptimo, produce un sake con umami limpio y bien proporcionado y acidez suave.
