Un junmai ginjo elaborado con Yamada Nishiki pulido al 50%, envejecido aproximadamente dos años a temperatura ambiente antes de su lanzamiento. El envejecimiento prolongado produce una textura suave en boca con aromas de frutas secas y ligeras notas de nuez, además de un umami profundo y redondeado. El valor del medidor de sake es +7 y la acidez 1,8, expresando un carácter seco y maduro que está en su mejor momento a temperatura ambiente o caliente.
