Yamada Nishiki pulido a un excepcional 35 % y elaborado con agua subterránea de la cuenca del río Tenryu, este daiginjo de la prefectura de Shizuoka se somete a una prolongada fermentación a baja temperatura siguiendo la tradición cervecera Echigo, siendo Senju Brewery la única destilería en Shizuoka que utiliza este linaje. Un delicado aroma ginjo, un umami de arroz cálido y un final limpio en garganta definen esta expresión refinada de Senju Brewery.
