Sake Junmai Tokubetsu elaborado con el método tradicional kimoto. Sin añadir levadura, la fermentación natural se desarrolló durante 40 días a baja temperatura y luego se refinó lenta y cuidadosamente durante 30 días. Se percibe la acidez, un sabor potente y una profundidad aromática. Combina bien con platos cremosos a base de lácteos, como el gratín, el queso azul y el queso de corteza lavada.
