El Yamada Nishiki cultivado en Hyogo, pulido al 38%, se elabora en pequeños lotes con prensado en bolsa y agua subterránea rica en minerales extraída a 130 metros bajo la bodega de Matsuoka Brewing en Saitama. Este daiginjo ha ganado medallas de oro en el Concurso Nacional de Sake Nuevo durante ocho años consecutivos, el mayor número en la historia de la prefectura de Saitama, mostrando una textura sedosa y un refinado aroma floral.
