Este junmai utiliza arroz cocido al vapor con el método koshiki, koji elaborado en cajas de madera y un pie de cuba fermentado en barriles calentados. La ausencia de enzimas añadidas da lugar a un sake de arroz puro rico y profundo, característico del estilo de Matsuo.
