Ciruelas ume enteras se maceran en este umeshu de base junmai elaborado con un pulido del 80 %, permitiendo que el umami arrocero del sake proporcione una base más redonda y menos espirituosa que los vinos de ciruela típicos a base de alcohol destilado. La línea Kinkankuromatsu de Murashige Sake Brewery se apoya en las dos fuentes de agua de Iwakuni, que dan forma al carácter del sake base.
