Honjozo elaborado con Yamada Nishiki usando agua mineral suave extraída de la cordillera Yagizo, en los remotos altiplanos de Oku-Kuji al norte de Ibaraki. La cervecería, fundada en la era Bunsei del periodo Edo, persigue un estilo limpio y de cuerpo ligero puliendo el arroz a un alto grado y apoyándose únicamente en su propio personal sin un toji contratado.
