Description

Judan Jikomi se inspira en los vinos de cosecha tardía para extraer la dulzura concentrada y la complejidad del sake al estilo de un gran Sauternes. Judan Jikomi se elabora meticulosamente a baja temperatura. La adición de arroz al vapor y koji de arroz tarda más de tres veces el tiempo del método de elaboración estándar, dando como resultado un proceso de diez pasos (Judan) (Jikomi). La fermentación a baja temperatura dura 50-60 días, extrayendo lentamente el aroma y el sabor elegantes del mosto. Elaborado con 100 % de arroz Yamada Nishiki, el "rey" del arroz para sake.
