Hiroshima Hattan Ginjo de Hakubotan Shuzo se elabora en Saijo, Higashi Hiroshima, en la cerveceria de sake mas antigua de ese celebre distrito, fundada en 1675. El uso del arroz Hattannishiki, la variedad insignia de Hiroshima apreciada por sus cualidades favorables al Ginjo y su potencial aromatico, refleja una tradicion de expresion del terruño local en el entorno de elaboracion con aguas blandas de Saijo. Hakubotan esta asociada con la revolucion japonesa del brassage con aguas blandas de finales del siglo XIX, que ayudo a sentar las bases del estilo Ginjo elegante y aromatico reconocido hoy en todo el mundo.
