Dieser Junmai wird nach der traditionellen Funaguchi-shibori-Methode (Tankmund-Pressung) gepresst, bei der der frischeste Sake-Lauf direkt vom Presskopf aufgefangen und dann roh (namachozoshu) bis zum Versand gelagert wird. Zu 100% aus Vertragsanbau-Yamae Nishiki-Reis aus der Region Togakushi und Shinano im nördlichen Nagano gebraut, trägt er einen sauberen, leicht fruchtigen Charakter mit zurückhaltender Säure und frischem Abgang.
