Am Ende der Fermentation wurde der Alkoholgehalt auf 16 Grad festgelegt, in der Suche nach einer neuen Form des Junmai Daiginjo. Der gepresste sake wurde sofort abgefüllt, wobei die frische, glänzende Aromatik unverändert erhalten blieb. Das Aroma ist reichhaltig, mit Frische und Lebhaftigkeit, die auch für die 5-Millionen-Koku-Sorte typisch sind.
