Yamada Nishiki aus dem Spezialbezirk A der Präfektur Hyogo, auf 35 % poliert. Beim Abpressen des Alkohols wird keinerlei Druck ausgeübt: Der Flüssigkeit wird ausschliesslich durch die Schwerkraft aus den hängenden Sake-Beuteln entnommen und dann in der Flasche gereift.
