Hinomaru Jozo, established in 1689 in Masuda-machi, Akita Prefecture, is the only brewery in Japan permitted to carry the Hinomaru name, which shares its name with Japan's national flag. Umakaramansaku is one of the brewery's range of labels exploring dry, umami-forward styles, brewed with subterranean well water originating from the Kurikoma Mountain range that has fed sake production at this site for over three centuries.
