Furuhashi Shuzou has been operating on Tsuwano's historic Hon-machi street in Shimane Prefecture since 1878, and the Uijin brand name honors the brewery's founder, Yataro Furuhashi, who fought his first battle at age seventeen during the 1868 Boshin War. Because of this origin story, Uijin sake is traditionally given as a gift to people beginning something new, whether a first job, a marriage, or a new chapter in life. Since 2020, the brewery has produced all of its sake as junmai, using only rice, koji, and water from the clear rivers of the Tsuwano basin, with no added distilled alcohol.
