Yahiko Shuzo was founded in 1838 in Yahiko Village, Niigata, at the foot of the sacred Yahiko Mountain that rises above Echigo Ichinomiya Shrine. The brewery established its own proprietary Senryu brewing method, a process built on hand-polished rice, soft mountain spring water, and long cold fermentation followed by bottle pasteurization without filtration. Ryusenkoki is produced within this entirely terroir-driven framework, where every element — rice, water, yeast, and label calligraphy — originates in Yahiko.
