Kikukawa Co., Ltd. has been brewing in Kakamigahara, Gifu, since 1871, drawing on clear water from the Nagara River system and the brisk winter winds known as Ibuki-oroshi that create ideal cold-brewing conditions. For over 150 years the brewery has worked from the same site, maintaining a commitment to domestic rice and producing sake alongside brewing seasonings including mirin and cooking sake. Its flagship sake, produced under the Kikukawa name, draws on this long regional continuity and the soft character of its Nagara River water source.
