Chikugogawa is produced by Hiryu Shuzo, a brewery founded in 1899 in Tachiarai, Fukuoka Prefecture, at the heart of the Chikugo agricultural basin from which the brand takes its name. Nearly 90% of its production is consumed within the local Chikugo region, and the brewery deliberately avoids contemporary fruity styles in favor of aged, umami-rich dry sake fermented with traditional mid-20th-century yeast strains and rested for approximately one year before release.
