First Impressions & Atmosphere
Just a one-minute walk from Roppongi Station, Roppongi Sushi Muku / Sushi Shirogane offers an omakase experience in a convenient central Roppongi location. The restaurant has 28 seats, including 16 counter seats, where guests can watch the sushi being prepared up close while enjoying the course.

The Course
At the time of the visit, the omakase course was ¥8,800 (tax included). It began with three seasonal starters, followed by a chutoro pairing, sashimi, a vinegared dish, and octopus nigiri. The progression continued with a seasonal dish, two white-fish nigiri, the restaurant’s signature steamed abalone, shellfish nigiri, and fresh bluefin tuna nigiri. A seasonal mini rice bowl with special dashi was followed by silver-skinned fish nigiri, marinated lean bluefin tuna, sablefish grilled with Saikyo miso, steamed sushi, and the day’s hand roll. Shijimi clam soup and tamago completed the meal.



















Sake Highlights
The course moves from delicate sashimi, white fish, and shellfish to richer flavors such as bluefin tuna, steamed abalone, and sablefish grilled with Saikyo miso. This broad progression makes the menu well suited to sake, with lighter styles complementing the earlier dishes and fuller, umami-driven styles pairing naturally with the richer courses.
